1 CHOCOLATE FLAVORED OR GRAHAM CRACKER CRUST
3 1/2 C. (8 OZ.) THAWED COOL WHIP
1 C. COLD MILK
1 (4 SERVING) CHOCOLATE INSTANT PUDDING AND PIE FILING
1 C. CHERRY PIE FILLING
   SPREAD 1 CUP OF WHIPPED TOPPING ON BOTTOM OF PIE CRUST.
   COMBINE MILK AND PUDDING MIX IN MEDIUM BOWL.  BLEND WITH WIRE WHISK OR ELECTRIC MIXER (LOW SPEED) FOR 1 MINUTE.  FOLD IN 1 1/2 CUPS WHIPPED TOPPING.  SPREAD OVER SHIPPED TOPPING IN CRUST.
   SPREAD REMAINING WHIPPED TOPPING OVER TOP, LEAVING A 1 INCH BORDER AND FORMING A DEPRESSION IN CENTER OF THE WHIPPED TOPPING.  SPOON CHERRY PIE FILLING INTO THE CENTER.  CHILL AT LEAST THREE HOURS.  GARNISH WITH MELTED CHOCOLATE.

1 C. POWDERED SUGAR
1 C. BUTTER
1 C. OIL
2 EGGS
1 TSP. VANILLA
1 TSP. SALT
1 TSP. CREAM OF TARTAR
1 TSP. BAKING SODA
4 1/2 C. FLOUR
   MIX TOGETHER SUGARS, BUTTER, OIL, EGGS AND VANILLA AND SET ASIDE.  IN SEPARATE BOWL, MIX TOGETHER SALT, CREAM OF TARTAR, BAKING SODA AND FLOUR.
  BLEND ALL INGREDIENTS TOGETHER, CHILL.  WITH FLOURED HANDS SHAPE INTO BALLS AND PLACE ON COOKIE SHEET, FLATTEN WITH BOTTOM OF CHILLED GLASS DIPPED IN SUGAR.  SPRINKLE WITH COLORED SUGAR.
   BAKE AT 350 DEGREES FOR 7 TO 8 MINUTES UNTIL EDGES ARE GOLDEN.  6-7 DOZEN.


BUTTERSCOTCH BARS
3 TBSP. MARGARINE
1/2 C. FIRMLY PACKED BROWN SUGAR
2 C. MINI MARSHMALLOWS
4 C. OVEN-TOASTED RICE CEREAL
2 C. WHOLE WHEAT FLAKE CEREAL

   MELT MARGARINE IN A LARGE SAUCEPAN OVER MEDIUM HEAT.  ADD SUGAR; STIR WELL.  ADD MARSHMALLOWS; COOK UNTIL MARSHMALLOWS MELT, STIRRING CONSTANTLY.  REMOVE FROM HEAT; STIR IN CEREALS.
   PRESS CEREAL MIXTURE EVENLY INTO THE BOTTOM OF A 13X9X2" BAKING PAN COATED WITH COOKING SPRAY.  LET COOL FOR  1 HOUR.  CUT INTO 3X2" BARS.

PRESS EVENLY ON THE BOTTOM OF THE UNGREASED PAN. SPRINKLE WITH THE PISTACHIO NUTS. PRESS LIGHTLY INTO THE DOUGH. SPRINKLE WITH 1 TBSP. SUGAR. BAKE FOR ABOUT 50-60 MIN. OR UNTIL GOLDEN BROWN. 4 EGG YOLKS
4 TBSP. GRANULATED SUGAR
1 TSP. VANILLA EXTRACT
1/4 CUP LIGHT BROWN SUGAR SIFTED
SCALD CREAM IN A POT. BEAT EGG YOLKS, GRADUALLY ADDING THE GRANULATED SUGAR. SLOWLY POUR THE CREAM OVER THE EGG MIXTURE. ADD THE VANILLA. POUR INTO A 1 QUART CASSEROLE PAN. PLACE IN A PAN OF HOT WATER & BAKE UNCOVERED AT 325' UNTIL SET ABOUT 20-30 MIN. WHEN THE CUSTARD IS SET, SPRINKLE WITH THE SIFTED BROWN SUGAR. PLACE UNDER A BROILER OR IN THE OVEN SET ON BROILER UNTIL THE SUGAR MELTS OVER THE TOP. WATCH TO BE SURE THE SUGAR DOESN'T BURN. CHILL.
THIS IS A RICH SMOOTH CUSTARD THAT IS SERVED CHILLED.

1/2 CUP ALL-PURPOSE FLOUR
1 EGG WELL BEATEN
1 TBSP. SUGAR
1 TBSP. VEGETABLE OIL
1/8 TSP. SALT
MELTED BUTTER
1/4 CUP SUGAR
1/4 CUP ORANGE JUICE CONCENTRATE
1/4 CUP BUTTER CUT IN PIECES
11 OZ. CAN MANDARIN ORANGE SEGMENTS DRAINED
IN A BOWL, WHISK TOGETHER MILK, FLOUR, EGG, 1 TBSP. SUGAR, OIL, & SALT UNTIL BLENDED & SMOOTH. LET IT STAND FOR 30 MIN. HEAT A SKILLET OVER MED. HIGH HEAT. COAT LIGHTLY WOTH THE MELTED BUTTER. POUR IN 2 TBSP. BATTER & QUICKLY TILT THE SKILLET TO SPREAD EVENLY. COOK FOR 30 SEC. OR UNTIL THE BOTTOM IS LIGHTLY BROWNED; TURN THE CREPE OVER. COOK BRIEFLY. INVERT ONTO A PLATE. COAT THE PAN LIGHTLY WITH THE ADDITIONAL BUTTER & CONTINUE UNTIL ALL OF THE BATTER IS USED. COVER THE CREPES WITH SARAN WRAP; SET ASIDE. IN A SKILLET, PLACE 1/4 CUP SUGAR, ORANGE JUICE, & 1/4 CUP BUTTER. STIRRING OCCASIONALLY OVER MED. LOW HEAT, COOK FOR ABOUT 10 MIN. OR UNTIL GOLDEN & SYRUPY. FOLD THE CREPES INTO QUARTERS, PLACE IN A SERVING DISH. TOP WITH THE ORANGE SEGMENTS & SPOON THE HOT SYRUP OVER THE TOP. SERVE WITH ICE CREAM OPTIONAL.

1/2 CUP WELL-CHILLED HEAVY CREAM

WITH VEGETABLE PEELER, REMOVE 2 STRIPS ZEST FROM ORANGE  (ABOUT 3X1/2 INCH) AND MINCE. 
SQUEEZE ENOUGH JUICE FROM ORANGE TO MEASURE 1/2 CUP AND IN SMALL  HEAVY SAUCEPAN SIMMER UNTIL REDUCED TO 1/4 CUP.
REMOVE PAN FROM HEAT AND ADD SUGAR AND BUTTER TO JUICE, WHISKING UNTIL BUTTER IS MELTED.  WHISK IN EGG UNTIL COMBINED WELL AND COOK OVER MODERATELY LOW HEAT, WHISKING UNTIL THICK ENOUGH TO HOLD MARKS OF WHISK AND FIRST BUSSBLE APPEARS ON SURFACE, ABOUT 3-5 MINUTES.
REMOVE FROM HEAT AND ADD ZEST TO ORANGE CURD, WHISKING.  POUR ORANGE CURD INTO A BOWL SET IN LARGER BOWL OF ICE AND COLD WATER AND STIR UNTIL COLD.
IN ANOTHER BOWL, BEAT CREAM UNTIL STIFF PEAKS FORM AND FOLD INTO ORANGE CURD GENTLY BUT THOROUGHLY.
SPOON  INTO 2 CHILLED GOBLETS.  2 SERVINGS.
